My Moussaka

For Tracy in New Zealand

Here's the recepie for my special, wonderful, yummylicios soyabean moussaka. Soyabeans are great even if you're not veggie, slightly crunchy and loaded with protein. Great healthy dish as it's full of veggies. It's one of those things that take a long time to prepare and to cook, but is soooo worth it!

you need
250 g (dry wheight) 900 ml (soaked) soyabeans
2 large aubergines
500 ml (or more) yogurt
1 egg
some grated cheese

sauce
2-3 cloves of garlic
1 onion
150 ml cheap wine
1 tin (400 ml) chopped tomatoes
2 tbsp tomato pure
1 tbsp marmite
1 bay leaf
2 tsp oregano
1/2 tsp cinnamon
pepper (no salt)
other herbs (marjoram, dill)

Soyabeans
follow instruction on the pack, soak overnight and then boil for and hour if using dried ones. When cooled, chop finely. This is tricky because they're round and slippery little buggers.

Make the sauce
Finley chop garlic and onion. Fry on low heat until soft. Add wine, herbs etc. and then tomatoes. Finally add soyabeans and simmer for about 15 min. Leave for a bit to let the flavours develop, soyabeans are tasteless so they will absorb all the other flavours. Would probably be nice left over night.

Meanwhile
Fry the sliced aubergines until brown on both sides. Rub salt on if you want, I don't think it's necessary.
Mix yogurt and egg. Salt and pepper if you want.

Finally
Layer the sauce and aubergines. Top with yogurt mix and then the cheese. Stick it the oven at about 200 for 40 min (until it's nice and golden on top).

Serve
With pita bread, tzatziki, hummous, Greek salad, or anything else you fancy.
Serves about 4 as a main I think. Freezes brilliantly.

ps. all the veggies are homegrown.

me, sandwiches, the biggest cuppa ever known to man, rugby on TV and oceans of time.
knowing that I don't have to go anywhere today has got me in a serious chill out mood.
just what we needed

game of the year

New Zealand v Scotland at Murrayfield. Final Score 40-0.

the atmosphere was brilliant, especially after the game in the street. A mob of people kicking the ball, everybody got involved, it was like a gigantic street party!

My big game is on Sunday. Back to MURRAYFIELD to play the wanderers.

He is ready...

So what's new...

A picture, because it makes the blog more fun to look at. And because England seem to have regained the ability to play rugby and beat Samoa 44-22 (although it was a bit close at times and my heart-rate was right up).
This boy was back, kicked 24 points and seem to have given the other lads some courage.
It's also the only photo I could find to steal on the internet.
Well, been a bit lazy with the blogging lately... Busy days when Mum and Hampus were here, it was lovely. Celebrated mums birthday in a lovely Greek restaurant in Bridge of Allan, an amazing experience. When they left I was fighting a cold (still am) so I haven't been to the gym all week. Been to rugby training though, that's making life a lot more fun. Joined Kirkcaldy Ladies team http://www.kirkcaldyrugby.co.uk/, soon I'll be seen in the BLUE, WHITE AND pink (!). My premiership debut is in a weeks time against Murrayfield Wanderers, one of the top teams in the country!

And speaking of Murrayfield, we're going there tomorrow, not to play but to watch New Zealand play the Scots. It's going to be great!
